Recommended Recipe:
Farrer’s Scallops with Fresh Assorted Mushrooms and Lettuce Leaves
Ingredients:
300g Farrer’s scallops, 150g assorted mushrooms (Enoki, Shimeiji, Maitake ), 4 pieces water chestnut, a few carrot (sliced), 1 teaspoon minced garlic, some iceberg lettuce leaf, 2 teaspoons shao xing rice wine.
Seasoning:
1 tablespoon ginger juice, little salt & pepper, 1/4 teaspoon sugar, 1 teaspoon light soy
Methods :
1.
Blanch defrosted scallops. Strain.
2.
Briefly trim lettuce leaves after washed.
3.
Roughly chop mushrooms.
4.
Peel and dice water chestnuts.
5.
Stir-fry garlic and scallops with some oil. Splash wine. Add mushrooms, water chestnut and carrot slices, stir well. Pour in seasoning and thicken up with cornstarch and water. Serve with lettuce leaves.
